2019 Amontillado Fassfinish

Bright, youthful and boldly expressive, this single cask release shows how finishing casks can elevate the clarify of our unpeated spirit. Bottled at cask strength and hand-filled from Cask No. 273, it offers a vibrant snapshot of a whisky still in its early evolution yet already layered with Amontillado richness.

Distilled on the 3rd of July 2019, this whisky began its journey in 2nd fill ex-bourbon casks, gaining notes of vanilla, citrus and soft barely sweetness. On the 18th of July 2023, it was moved into an Amontillado finishing cask, adding depth, nuttiness and a delicate dryness that balances its youthful energy. This combination of bright bourbon maturation with the structure of Amontillado creates a lively yet complex profile, drawn straight from the cask in Warehouse 9 and bottled exactly as it was matured.
