We use a variety of sherry casks including Oloroso, Pedro Ximénez and Manzanilla each adding its own layer of complexity and sweetness.

Maturation varies widely, from younger vibrant expressions to older age statements that have spent decades developing depth in sherry wood.

PX (Pedro Ximénez) matured or finished releases tend to be the sweetest, offering lush notes of fig, date and toffee.
